Here are some ideas from Latinteach users for activities at the beginning of the school year, especially for Level 2 students:

I'm going to stand at the door as the students come in and hand each one a slip of paper - one of four colors. When the time comes in class, I will have the students groups themselves by color of paper. On each slip will be a couple sentences from a story they read/translated last year. Each group will have to arrange the slips in order and then translate the passage. On Day One this will require that they communicate and also works well for a quick review.

A strategy that I am using early on for a similar purpose is the common "Find someone who...," which can introduce or practice relative clauses, complementary infinitives, and much more. Essentially you just need several Latin statements that students can complete with the names of their classmates (which should only be used once).

Another approach is using putting proverbs or sentences on cards -- 1/2 or less on each, distributing the cards to students, and letting students mingle to find who has the other part. (This also works with English translations on one card and Latin on another.) Students then (also) may have a set of interview questions to ask their partner and will introduce that person to the class. They also explain their cards/proverb, etc.
