Here are some ideas for a health and fitness unit from FLTEACH users:

We do a skit which the students turn into a video. Its similar to Extreme Makeover (or a program like it) where the students need to include a work out section (to practice commands, excuses), a makeover section (to practice body parts) and 2 commercials (health related products). The students are asked to use imperative, preterit and present tense.

I used to put commands (formal or informal depending on previous studies) with health and fitness vocabulary. We then did "ads" for how to be a healthy person. Your "ads" could be oral (a TV or radio commercial) or written (magazine ad is 8X11, billboards are poster boards, or TV ad could be a power point. They had to use X many vocabulary words and X number of both positive (Drink water every day) and negative (don't eat high fat foods) commands. I graded it on grammar, appropriate graphics and minimum requirements of vocabulary.

Among other things, I have mine partner up and write and memorize an exercise routine (after which everyone has to complain that one body part or another hurts, or encourage each other to further effort, or exclaim that they feel pumped, tired, etc.) Then we spread the routines out over quite a while...basically, whenever the group looks droopy and lacks pep, or look in some way as if they need a "brain break" I call on another group to do their routine!! It works great to re-energize everyone and stay in the language AND practice vocab.
